We will present Farro Mafaldine, a dish with black truffle butter and mushrooms this time.
Ingredients:
- 1 tablespoon softened butter
- 1 1/2 teaspoons black truffle paste or finely grated black truffle
- 1/4 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- 170 grams of fresh wild mushrooms, stemmed and sliced
- 3 tablespoons extra virgin olive oil
- 1/4 teaspoon black pepper
- 227 grams of uncooked farro mafaldine pasta
- 1 clove garlic, thinly sliced
- 1/2 cup vegetable broth
- 2 tablespoons parsley
- 14 grams sardo cheese, grated
Heat the oven to 200° C. Mix the butter, truffle paste, lemon juice, and salt, and set aside.
Mix the mushrooms with oil, pepper, and salt, spread them on a baking sheet, and bake for 15 minutes until soft and brown.
Cook the pasta in salted water, cook the garlic in oil, mix with the broth and mushrooms.
Drain the pasta, then mix with the sauce. Add parsley and cheese, mix and serve.
