This time, we will present Limoncello-Ricotta cheesecake.
Ingredients:
Cooking spray
- 255 grams of spiced butter cookies
- 1/8 teaspoon salt
- 6 tablespoons melted butter
- 227 grams cream cheese
- 3/4 cup granulated sugar
- 1 cup ricotta cheese
- 1/2 cup limoncello
- 2 tablespoons fresh lemon juice
- 1 tablespoon vanilla extract
- 5 eggs
- Slices of lemon peel (optional)
- Small basil leaves (optional)
Preheat the oven to 175°C. Prepare with aluminum foil and spray with cooking spray.
Mix the biscuits and salt, add the butter, pour into the pan, bake for 10 minutes, and let cool.
Beat cream cheese and sugar. Add ricotta, limoncello, lemon juice, vanilla, and eggs. Pour the batter into the prepared pan.
Bake at 350°F for 50-55 minutes, then let it cool for 30 minutes. Refrigerate for at least 3 hours.
Garnish with lemon peel and basil leaves. Store in the refrigerator for up to 4 days.
