Ingredients:
- Fried red grapes
- 450 grams of red seedless grapes
- 1 tablespoon of grape seed oil
- Half a teaspoon of granulated sugar
- A pinch of salt
- A cake
- 100 grams of butter
- 3/4 cup raw almonds
- 1 large egg yolk
- 1 tablespoon of grated orange peel
- 1/4 teaspoon almond extract
- 1/4 teaspoon vanilla extract
- 120 grams of flour
- 6 tablespoons of cornmeal
- Half a teaspoon of salt
- 1/3 cup granulated sugar
- 3 tablespoons of brown sugar
- Champagne
Prepare the roasted red grapes
Put all the ingredients together on a baking sheet. Roast in the preheated oven for 6-10 minutes. Remove from the oven and set the grapes aside while you prepare the cake.
Spread the almonds on a baking sheet and bake for 6-10 minutes until lightly toasted; let cool for about 15 minutes.
Chop the almonds coarsely and set them aside. In a small bowl, whisk together the egg yolks, orange zest, almonds, and vanilla extract.
Whisk together the flour, cornmeal, and salt in a medium bowl.
Cut the butter into the flour mixture, then stir in the sugar, brown sugar, and almonds.
Gently work the dough into the egg mixture until combined.
Put the dough in the pan and bake at 175°C for 25-35 minutes until golden brown.
Chill for 1 hour, then slice and serve with roasted red grapes and champagne.
