Herbed Royal Salmon

Ingredients:

  • 2 tablespoons of vegetable oil
  • 65 grams of mushrooms
  • 2 large buckets
  • 1 glass of Pinot Noir wine
  • 10 sprigs of tarragon plus fresh tarragon leaves for garnish
  • 10 sprigs of thyme
  • 10 sprigs of dill
  • 1 cup bottled clam juice (such as Bar Harbor)
  • 1/2 cup heavy cream
  • 230 grams of butter
  • 2 teaspoons of fresh lemon juice
  • 1.7 teaspoons of salt
  • 0.7 teaspoons of black pepper
  • 1.6 kg of king salmon, cut into 10 parts and dry with a paper towel

Heat the oven to 200°. Pour the oil into the pot, and add the mushrooms and onions as soon as it is hot.

Add wine, tarragon, thyme, and dill, and cook until the wine is reduced, 4-5 minutes. Pour in cream and cook for 18-22 minutes, until reduced.

Remove from heat, stir in 1/2 cup butter, and season with lemon juice, salt, and pepper.

Season the salmon fillets with the remaining salt and pepper, fry in 1 tablespoon of oil, steam for 1-2 minutes, transfer to a baking sheet, and top with butter and herbs.

Bake for 6-8 minutes; serve with hot wine sauce, garnished with tarragon and dill.
