Ingredients:
- 3/4 cup "Extra" vegetable olive oil
- 1/2 cup white wine vinegar
- 2 tablespoons of green peppercorns in brine
- 1 teaspoon of salt
- 3/4 teaspoon crushed red pepper
- 8 sprigs of thyme
- 1 box feta cheese, cut into cubes
Whisk the oil, vinegar, peppercorns, salt, crushed red pepper, and thyme in a small bowl.
Arrange the feta evenly in a square dish, and pour the marinade on top.
Cover with plastic wrap and refrigerate for 8 hours or overnight. Stir several times during marinating. Serve with crackers or crostini.
Feta marinated with hot peppercorns is an ideal appetizer.
