Discovering an unusual taste

Ingredients:

  • 2.25 kg of ribs
  • 1 teaspoon of caraway seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon of fennel seeds
  • 1 teaspoon Persian cumin seeds
  • 1/8 teaspoon black pepper to taste
  • 2 tablespoons of canola oil
  • 1/2 cup minced onion
  • 1/2 cup apple cider vinegar
  • 1/4 cup pure maple syrup

Heat the oven to 150°. Cut the meat from the ribs.

Fry the caraway, coriander, fennel, and cumin and mix in a grinder until they become a powder.

Season the ribs with salt, pepper, and the spice mix. Place in the oven and cook for 2 hours and 15 minutes.

Heat the oil, add the onion and salt, and cook for 5 minutes. Add the vinegar and maple syrup and cook for 5-8 minutes until thickened.

Place the ribs in the oven under the broiler for 1-2 minutes to brown. Apply the onion glaze and cook on the other side for 1-2 minutes.

Transfer the ribs to a board, rest for 5 minutes, and cut.
