Ingredients:
- 0.25 butter, divided into parts
- 2 tablespoons of flour
- 1 cup whole milk
- 1 cup of whipped cream
- 1 teaspoon of salt
- 1 teaspoon of ground white pepper
- 1 portion onion
- 280 grams of fresh spinach
- 400 grams of pre-shredded parmesan cheese

- 1 tablespoon of chili
- 40 grams pre-shredded, low-moisture skimmed mozzarella cheese
- 40 grams of pre-shredded, low-moisture skimmed mozzarella cheese
Heat the oven to 230°. Melt 2 tablespoons of butter in a small saucepan. Add the flour, gradually adding the milk and cream, stirring constantly until it is completely absorbed and there are no lumps.
Bring to a medium boil, stirring constantly, for 1 minute. Reduce heat to low and simmer, stirring occasionally, until thickened. Stir in 3/4 teaspoon salt and 1/4 teaspoon white pepper.
While the milk mixture is cooking, melt the remaining 1/4 cup butter. Stir in the onion and cook, stirring occasionally, for about 6 minutes. Add the spinach and cook, stirring often, until the liquid evaporates, about 4 minutes.
Pour the milk mixture into the spinach mixture in the oven, stir to combine, then add the Parmesan and the remaining 1/2 teaspoon salt and pepper.Remove from heat.
Cut the dough crosswise into five slices. Place the dough on a large-rimmed baking sheet lined with parchment paper or aluminum foil. Spoon the spinach-Parmesan mixture evenly between the slices of bread and top with chiles.
Sprinkle the mozzarella evenly. Bake in the oven until the top is browned and the center is hot, 7-10 minutes.
